Food Quality and Nutrition: Towards Sustainable and Personalized Dietary Models

Cibus Tec will offer a wide-ranging programme of conferences, workshop and engaging talks organized by the most renowned national and international scientific and technological partners. High-level networking opportunities will be given to all professionals involved in the food and beverage technologies sector, who will gather in Parma to find new ideas toghether and anticipate future trends.

The conferences and conventions of Cibus Tec Forum will be held in the four different Rooms located inside Halls 7/8.

OnFoods is an active partnership in major areas of food research – from nutritional quality to food safety, from supply chain sustainability to process innovation – and is structured into seven major thematic research groups (called Spokes): true centers of excellence in personalized nutrition, food quality and safety, sustainable food systems, circular economy, digital and robotic technologies, food education, and supply chain innovation.

OnFoods joins Cibus Tec Forum to offer scientific content, concrete projects, and technology transfer opportunities, creating highvalue connections between academia and industry.


Session overview:

This OnFoods session focuses on a crucial goal: the development of sustainable and personalized dietary models capable of meeting the nutritional needs of individuals differing by age, sex, physiological status, lifestyle, and metabolic profile. The challenge is twofold: on the one hand, improving the quality of the food supply by reformulating products to reduce critical issues such as excess salt, sugar, or fat; on the other hand, promoting truly personalized approaches that can have a real impact on the prevention of chronic diseases and the promotion of population health.

Plant-based models are at the heart of the research process and can be seen as a key pathway toward sustainability. However, further investigation is still needed to ensure their full nutritional adequacy. The goal is not a blanket substitution of animal-based products, but the development of balanced and acceptable strategies for consumers—approaches that preserve nutritional quality while reducing environmental impact. In this context, the demand for plant-based alternatives that are truly valid and high-quality is on the rise.

The strength of this session lies in its multidisciplinary approach: nutritionists, food technologists, researchers, and industry partners collaborate to develop tailored foods and diets based on scientific evidence and technological innovation. Advanced tools such as proteomics make it possible to understand how individuals respond to specific diets, paving the way for true precision nutrition.
